soo….holy shit.  i was so inspired by twin peaks (benjamin hornes brother, to be exact) to make a toasted brie sandwich, that i went crazy making them.  made some yesterday for josh and andrew, but today i went a little extra crazy.  

what you see here is a pan fried toasted brie sandwich with marinated artichoke hearts chopped up to layer over the couple layers of flattened chunks of brie, baby spinach, oregano, basil on a half of a french bread loaf that was also oiled and seasoned on the underside.  i then pan fried it with olive oil on the range, weighing it down slightly with a pot so it would flatten and become even more nom.

it was burnt slightly because i wanted to make sure the cheese would melt.  fortunately it only added flavor because it was frying in olive oil and not being heated to a burn.

i am crying at how good this is.  too bad my sun dried tomatoes went bad yesterday. :(

sweet jesus, kyle, make me one of these RIGHT NOW.

though actually, i did make a brie + caramelized onion chutney panini earlier today :D
